Cilantro Lime Rice

I tried a new recipe for Cilantro Lime Rice aka: The best rice ever from Chipotle.


I have made CLR (not the cleaner) before and it was pretty good. So I decided to venture with a new recipe and make a few extra changes.  I attempted to use brown rice for health factor.


The recipe was great....but my version failed miserably!

2 teaspoon Smart Balance Oil
4 teaspoons fresh cilantro-chopped
2 cups basmati rice (I used brown basmati rice)
4 cups water
1 teaspoon salt
Juice of one lime (I used frozen lime juice that I thawed)


So first lets just point out all the mistakes...


A.  Using brown Basmati rice-The flavor is way too strong...I mean it tasted like what a corn crib at a farm smells like. Brown Basmati has a very nutty flavor which didn't allow for any lime or cilantro flavor to penetrate. Next time I will stick to White Basmati Rice!


B.  Freezing lime juice is dumb. A while back I thought I would freeze the juice of some leftover fresh limes I had.  Apparently, freezing the juice causes some sort of breakdown in the flavor which leaves the juice extremely bitter...I am sure others already knew this.


C.  I used way too much water...The rice was sticky and overcooked.  


So the point of this post is to help others not make the same mistakes I did.  I am pretty certain if you follow the real recipe from the link above...the rice will turn out stupendous.  I will let you know once I make it again!

Menu Plan: September 12th-September 18th

This week I am trying to focus on using in-season fresh produce!  I found a great website that has a Midwest Seasonal Food Chart.  Check it out!!


Monday
Breakfast: Smoothies and Toast with PB
Lunch: Grilled chicken over Spinach salad
Dinner: Potato Soup
Snacks: Nectarine, Yogurt with homemade granola

Tuesday
Breakfast: Scrambled eggs with spinach and mushrooms
Lunch: Bean and cheese quesadillas
Dinner: SUSHI!!  (out to dinner)
Snacks: Pear, Almonds

Wednesday
Breakfast: Oatmeal 
Lunch: Tomato Sandwich and veggies
Dinner: Chicken Enchiladas (use extra grilled chicken from Monday's salad)
Snacks: Carrot sticks with homemade hummus, grapes

Thursday
Breakfast: PB Toast with Banana
Lunch: L.O.  Enchiladas
Dinner: Crockpot Lasagna and homemade Italian bread-(dusting off the bread maker!)
Snacks: Cucumber slices, Nectarine

Friday
Breakfast: French Toast Bake
Lunch: Turkey/Roast Beef Sandwiches
Dinner: Homemade Veggie Pizza (pepperoni on Joe's side)
Snacks: yogurt, Smoothies

Saturday
Breakfast: Cereal with dried cranberries
Lunch/Dinner: L.O.

Sunday
Breakfast: Eggs
Lunch: Out with Family/Watching the Bears Game
Dinner: something quick-going to Byron to see my mommy!
